Mullets with Liver Sauce

Mullets with Liver Sauce

Preparation:

Put the mullet liver and chopped garlic in a frying pan, add butter sauce, a bit of lemon juice and the bay leaf.

With a fork, stir till the liver comes apart and the sauce has thickened (approx 2-3mins).

After grilled, place the 2 mullets on a tray and cover with the sauce. Goes nicely with a green salad and boiled potatoes.

Ingredients:

2 Mullets
Mullet liver
Garlic
Butter
Bay Leaf
Lemon

Chispalhada by Montijo

Chispalhada by Montijo

Montijo is located in the north of Portugal Dream Coast, surrounded by the green of the rural landscape and by the blue of Tejo River.

Montijo has traditions on agriculture and fish from  the river.

Preparation: After washing and scraping the meat, put it in a pot, adding water and salt accordingly, and boil. Once the meat is cooked, remove from pot and set it aside. Cook the cabbage, carrots and potatoes cut into quarters in the meat broth. At the same time, cook the sausage separately.

You can use the broth to cook noodles. Serve on a platter with the potatoes, cabbage, carrots and beans in the centre and around the meat.

Ingredients: 7,5 Dl kidney beans soaked 100 g of lard / bacon 1,5 Kg dewlap, sparks, tail and pig’s ear 1 spicy sausage 500 grs cabbage 200 grs carrots 350 grs potatoes Salt and Water.  

Now, you can cook Chispalhada by Montijo.

Wild Chicken with Walnuts

When you travel to Setúbal you can taste the amazing seafood dishes but also amazing meat dishes and salads.

We present you this amazing dish of Wild chicken with Walnuts.

Preparation :
Take the onions to fire in a pan with oil, garlic, sage and brown.

Then add o,5 lt of water and the chicken cut into pieces.

When the water has dried up almost completely and the chicken is cooked, remove it from the pan and set aside on a plate.
Grind the walnuts in the bread crumbs (reserve some whole), pour in pan and scrape the bottom, mixing everything well.
Season with salt.

Ingredients:
1 kg Wild Chicken
200g onions, sliced
1 clove garlic
1 sage leaf
250g walnuts
2 or 3 tablespoons of breadcrumbs salt oil

Eel Stew – Recipe

Between the blue of  Tejo River and the green of the farms is Montijo.

Located on the North of Portugal Dream Coast, Montijo is well-known by this wonderful dish.

This recipe is for four people.

We hope you like this dish from Montijo and Seixal .

Preparation:

Place tomatoes, garlic, onions, fat, and tomato paste in a saucepan.

Let the ingredients brown and then add the chilli, salt, sliced eel and water.

After boiling for ten minutes, season accordingly, and sprinkle with chopped coriander.

Before serving, trim with the mint.

You are now ready to taste a delicious dish.

Ingredients:

1 Kg of eel sliced thick
Fried bread
3 Chopped onions
Ripe tomato (Your taste)
Tomato paste (Your Taste)
2 Garlic cloves
Coriander
Mint
Chilli (at your tasty)
2 tablespoon of lard
1 Tablespoon olive oil
Salt
