Fish Stew from Setubal

A caldeirada, a traditional Portuguese fish stew, can consist of seafood (caldeirada de marisco), salted codfish (caldeirada de bacalhao) or any fish of your choice.

Preparation:

Take a large pot, cut the fish into big lumps (including the heads, tails and bones, don’t throw away the good parts).

Cut the potatoes, tomatoes, garlic and onions into thin slices, cut the peppers into cubes.

Drizzle some olive oil in the pan and start ‘building up’ the caldeirada.

Place the slices of potatoes in the pot, the slices of tomato, the peppers, garlic and onion and finally a third of the fish, some sea salt and coriander.

Then start with the second layer, repeating the entire process untill all ingredients are used up.

Top with some extra sea salt, coriander, olive oil and white wine.

Don’t save on the olive oil cooking the caldeirada in oil gives it the rich typical taste.

Place the (closed) pot on a low fire, and let the caldeirada simmer ‘till all the ingredients are cooked (about 45 minutes/).

Ingredients (besides the fish):

  • 4 large potatoes
  • 4 cloves of garlic
  • 1 large onion
  • 3 large tomatoes
  • 1 red and 1 green pepper
  • Olive oil
  • White wine
  • Sea salt
  • Coriander

Mullets with Liver Sauce

Mullets with Liver Sauce

Preparation:

Put the mullet liver and chopped garlic in a frying pan, add butter sauce, a bit of lemon juice and the bay leaf.

With a fork, stir till the liver comes apart and the sauce has thickened (approx 2-3mins).

After grilled, place the 2 mullets on a tray and cover with the sauce. Goes nicely with a green salad and boiled potatoes.

Ingredients:

2 Mullets
Mullet liver
Garlic
Butter
Bay Leaf
Lemon

Preparation

To make the Boilers Fisherman Stylish of Sesimbra, start to find a large pot to make layers with the ingredients.

First  is the onions, followed by a layer of fish, a layer of sliced potatoes, layer the fish in another order and put the rest of the potatoes.

Season with pepper, garlic, olive oil, bay leaf, salt and water or white wine and let it cook on low heat.

Serve sprinkled with parsley.

This recipe is for four people.

Ingredients
800 g of fish (challenge, purple duck, monk fish, skate, squid)
800 g potato
3 medium onions
1 kg ripe tomatoes
medium pepper
2 tablespoons olive oil
1 bay leaf
2 cloves garlic
pepper, parsley q.b.
½ tablespoon salt
1 dl water or white wine

Preparation

Chispalhada by Montijo

Chispalhada by Montijo

Montijo is located in the north of Portugal Dream Coast, surrounded by the green of the rural landscape and by the blue of Tejo River.

Montijo has traditions on agriculture and fish from  the river.

Preparation: After washing and scraping the meat, put it in a pot, adding water and salt accordingly, and boil. Once the meat is cooked, remove from pot and set it aside. Cook the cabbage, carrots and potatoes cut into quarters in the meat broth. At the same time, cook the sausage separately.

You can use the broth to cook noodles. Serve on a platter with the potatoes, cabbage, carrots and beans in the centre and around the meat.

Ingredients: 7,5 Dl kidney beans soaked 100 g of lard / bacon 1,5 Kg dewlap, sparks, tail and pig’s ear 1 spicy sausage 500 grs cabbage 200 grs carrots 350 grs potatoes Salt and Water.  

Now, you can cook Chispalhada by Montijo.
