Tortas de Azeitao – Recipe

Preparation:

Mix the egg yolks and sugar, and beat till thickened.

Then beat in the flour till the ingredients are combined.

Now add the whipped up egg whites into the mixture.

Note that the egg whites should be whipped up manually.

Grease the baking tray and pour in the mixture (alternatively you could use individual metallic cube trays) and let it stand for 10 minutes before placing in the oven.

Oven should be heated to 220ºC. Remove the pies from the oven, brush them with egg custard and roll them up.

These are individual rolls, so you can select the size; however, we suggest a 5 cm diameter and 8 cm length.

They should have a yellow colour to them and look undercooked.

  • 70 grs. flour
